- 2 medium zucchini (cubed)
- 1 onion (cut into ¾ inch pieces)
- 1 bell pepper (any color, cut into ¾-inch pieces)
- 4 fully cooked chicken or turkey sausages (sliced into circles ¼-inch thick)
- 2 ½ tbsp olive or avocado oil
- ¼ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp onion powder
- ¼ tsp pepper
- ½ tsp salt
- 1 tsp garlic (minced)
- Fresh basil (for garnish, optional)
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Add sliced sausage and sauté until browned (about a few minutes). Remove and set aside.
- In the same skillet, reduce heat to medium and add remaining oil. Add zucchini, onion, and bell pepper; season with spices. Stir well.
- Cook until onions are translucent and vegetables are tender (about 5 minutes).
- Return the sausage to the skillet along with minced garlic. Stir to combine and cover for a few minutes to meld flavors.
