  • 2 pounds apricots (approximately 1 kilogram)
  • 1 cup granulated sugar (200 grams)
  • ¼ cup freshly squeezed lemon juice (60 ml)
  • ½ cup water (125 ml)

Instructions

  1. Wash, halve, and pit the apricots. Place them in a wide-bottomed pot with the water.
  2. Bring to a simmer over medium heat, stirring constantly for about 10 minutes until the apricots are mashed.
  3. Add the sugar and lemon juice to the pot; stir well to combine.
  4. Reduce heat to low and simmer for around 40 minutes, stirring occasionally until thickened.
  5. Test the consistency using a chilled plate; if it runs together quickly, continue simmering.
  6. Pour hot jam into sterilized jars, leaving about 0.4 inch (1 cm) space at the top. Seal and turn upside down to cool completely.
  7. After cooling, check seals by pressing the center of each lid; store any unsealed jars in the fridge.
