  • 3 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 1 Teaspoon salt
  • 1 Teaspoon onion powder
  • 1 Teaspoon garlic powder
  • 1 Teaspoon paprika (smoked or regular)
  • ½ Teaspoon black pepper
  • Parsley flakes (for garnish)

Instructions

  1. Preheat oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Wash and dry the potatoes thoroughly.
  4. Prepare lemon water by mixing cold water with 2 tablespoons of lemon juice in a bowl.
  5. Carefully carve skull faces into each potato using a paring knife, then immerse them in the lemon water.
  6. In another bowl, mix olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper until combined.
  7. Drain carved potatoes from lemon water and toss them in the seasoning mixture until coated evenly.
  8. Place potatoes face side up on the prepared baking sheet and bake for about 30 minutes until golden brown and tender.
  9. Garnish with parsley flakes before serving.
