  • ½ cup butter (room temperature)
  • 1 ⅔ cups sugar
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 cups diced & peeled apples (about 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until smooth; add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with the butter mixture, then fold in diced apples and optional nuts.
  5. Pour batter into prepared pan and bake for about 35 to 40 minutes until golden brown.
  6. Prepare caramel sauce by melting brown sugar, half & half, and butter in a saucepan over medium-low heat until smooth.
  7. Drizzle caramel over the baked cake and return to oven for an additional 10 to 15 minutes.
