  • 5 cups sweet potato, peeled and cubed
  • 1 cup apple (Gala or Golden Delicious recommended)
  • 1 tablespoon olive oil
  • 1 shallot, chopped
  • 3 ½ cups low sodium vegetable broth
  • 1/8 teaspoon fresh nutmeg
  • 1/4 teaspoon cinnamon
  • Pinch kosher salt
  • Maple syrup (optional)

Instructions

  1. Heat olive oil in a medium-sized soup pan over medium heat.
  2. Sauté chopped shallots until translucent, about 3-4 minutes.
  3. Add sweet potatoes, apples, and a pinch of salt; sauté for another 3 minutes.
  4. Pour in enough vegetable broth to cover the mixture; simmer until soft, about 15-20 minutes.
  5. Blend the soup until smooth using an immersion blender or regular blender (let cool slightly if using a traditional blender).
  6. Stir in nutmeg, cinnamon, additional salt, pepper, or maple syrup to taste.
