  • 1½ cups mashed sweet potatoes
  • ½ cup softened butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and mashed sweet potatoes.
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually mix dry ingredients into the wet mixture until just combined. Pour into the prepared loaf pan.
  6. Combine topping sugar with cinnamon and sprinkle over batter.
  7. Bake for 55–65 minutes or until a toothpick inserted comes out clean. Cool in the pan for about 15 minutes before slicing.
