  • 1 package (8 ounces) Monterey Jack cheese, shredded
  • ½ cup mayonnaise
  • 1 tablespoon fresh sage, chopped
  • 4 flour tortillas (10-inch)
  • 1 pound leftover turkey (white or dark meat)
  • 12 ounces leftover stuffing
  • ½ cup whole berry cranberry sauce

Instructions

  1. In a medium bowl, combine shredded Monterey Jack cheese, mayonnaise, and chopped sage.
  2. Spread the cheese mixture evenly on each tortilla. On one half of each tortilla, layer turkey, stuffing, and cranberry sauce. Fold the other half over.
  3. For the dipping sauce, mix remaining mayonnaise with sage in a small bowl.
  4. Heat a non-stick skillet over medium heat and cook two folded quesadillas for 1-2 minutes on each side until golden brown. Repeat with remaining quesadillas.
  5. Cut each quesadilla in half and serve warm with the creamy dipping sauce.
