  • 30g granulated sugar
  • 12.5g fresh yeast
  • 1 egg yolk (room temperature)
  • 1 whole egg (room temperature)
  • 250g bread flour
  • ¼ teaspoon salt
  • 80g unsalted butter (room temperature)
  • 150g apple (peeled and diced)
  • 80g brown sugar
  • 60g unsalted butter (for filling)
  • 1 teaspoon cinnamon

Instructions

  1. In a bowl, mix lukewarm milk, sugar, and yeast; let it foam for about 5 minutes.
  2. Combine flour and salt in a stand mixer; add the yeast mixture, egg yolks, whole egg, and butter. Mix until smooth.
  3. Let the dough rise in a greased bowl for about an hour until doubled.
  4. Toss diced apples with lemon juice; mix brown sugar, butter, cinnamon, and spices in another bowl.
  5. Roll out risen dough into a rectangle; spread filling evenly and roll tightly into a log.
  6. Twist the log lengthwise to reveal the filling and place in a greased loaf pan. Let it rise again for 30 minutes.
  7. Preheat the oven to 350°F (175°C) and bake for approximately 40 minutes until golden brown.
