  • 1 lb boneless skinless chicken breast
  • 6 cups baby spinach
  • 2 ripe peaches
  • 1/2 cup blueberries
  • 1/4 cup sliced red onion
  • 1/4 cup pecan halves
  • 1 ounce crumbled goat cheese (or feta)
  • 1 tablespoon coarse ground mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • salt & pepper to season
  • 1 teaspoon grape seed oil (or avocado/canola)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season chicken with salt and pepper. Brush peach flesh with oil.
  3. Grill chicken for 5-7 minutes per side until cooked through; grill peaches flesh-side down for about 3-4 minutes.
  4. Let both rest before slicing.
  5. In a bowl, whisk together dress ingredients until blended.
  6. Combine spinach, blueberries, onion, cheese, and pecans in a large bowl. Add sliced chicken and peaches on top and serve with dressing.
