  • 20 oz refrigerated cheese tortellini
  • 1 pint cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 cup kalamata olives
  • 1 cup mozzarella balls
  • 1/2 cup salami or pepperoni
  • 2 cups baby spinach or arugula
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook tortellini in salted water until al dente; drain and cool.
  2. In a jar, combine dressing ingredients; shake until emulsified.
  3. Mix warm tortellini with half the dressing; let cool.
  4. Add remaining ingredients and toss with remaining dressing.
  5. Chill for at least 2 hours before serving.
