  • 2 cups fresh pineapple chunks
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • Cooking oil

Instructions

  1. Press the tofu between clean kitchen towels for about 15 minutes.
  2. Cut the pressed tofu into 1-inch cubes and coat evenly with cornstarch.
  3. Heat oil in a skillet over medium-high heat and cook the tofu in a single layer until golden brown on all sides, about 8 minutes total.
  4. Remove tofu and add sliced bell peppers and onion to the skillet, sautéing until caramelized (about 5 minutes).
  5. Stir in minced garlic and ginger; cook until fragrant (30 seconds).
  6. Add pineapple chunks to caramelize for an additional 2-3 minutes.
  7. Mix soy sauce, rice vinegar, and maple syrup in a bowl, then pour over the sautéed mixture.
  8. Return tofu to the skillet, stirring gently for another 2 minutes until coated.
