  • 1 personal-sized seedless watermelon (to be used as the bowl)
  • 1 cup diced watermelon
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers (any combination of green, orange, yellow or red peppers)
  • ½ cup diced onion
  • ⅓ cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp finely minced jalapeno pepper (optional – add more for additional heat)
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

  1. Prepare the watermelon bowl by cutting off the top quarter and scooping out the flesh.
  2. Dice enough watermelon to measure one cup and set aside.
  3. In a mixing bowl, combine diced watermelon, cucumbers, bell peppers, onions, cilantro, jalapeños (if using), lime juice, salt, and black pepper.
  4. Mix well and adjust seasoning if necessary.
  5. Serve immediately in the hollowed-out watermelon bowl.
