  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • Salt & pepper (to taste)
  • 2 apples (peeled and roughly chopped)
  • 1 white onion (peeled & roughly diced)
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 15 oz cans cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add apples and onions; cook until soft, about 6-8 minutes. Stir in chili powder and cumin.
  2. Lower heat; melt butter in the pot and whisk in flour for one minute.
  3. Gradually whisk in chicken broth followed by half & half; simmer until thickened.
  4. Mix in chicken, beans, and apple-onion blend until combined.
  5. Adjust thickness with additional broth if needed; stir in cheese until melted.
  6. Serve hot with desired toppings.
